A chat and creative four-course meal with local food producers – eat smart!
We learn new things about the people, products and solutions from the region. We discuss, listen and ask questions. In between, we take two culinary breaks and enjoy the food together. The event is moderated by journalist Dorothea Heintze, with NDR chef and Hobenköök chef Thomas Sampl also in attendance.
About Odefey & Daughters
‘Good ideas must be put into practice!’ thought Lars Odefey, and so he founded the small agricultural business Odefey & Töchter. Here, in the Lüneburg Heath, sustainability meets traditional farming and animal welfare. How, you ask? From hatching to free-range farming to the end of their lives, animal welfare and respect are always at the forefront. And in this case, that’s not just empty talk, but a genuine promise!
Here, everything revolves around happy poultry and passion. Hens and roosters live in luxury, so to speak: hand-feeding and lots and lots of space are just two factors of this farming method. What is truly impressive is the group size of Lars’ chickens, which is more than 90% smaller than organic guidelines stipulate.
It is not people who are responsible for maintaining the landscape on the farm, but the farm’s own sheep, which also look after the poultry. Sustainability is practised in all areas, which of course also presents many challenges, such as the renewal of old energy systems on the farm.
Odefey & Töchter demonstrates that craftsmanship, a profound understanding of animals and their welfare, combined with old and new technologies, can lead to a truly sustainable cycle.
